Tuna Quesadilla Wedges

Add a little Mexican sunshine to your meal. These ’tortilla sandwiches’ would make a great lunch or cut into smaller wedges for appetizers.

Prep Time - 15 minutes or less Cook Time - 10 minutes Servings - Makes 3 servings or 24 appetizers.

 


Ingredients:

  • 1 can (170 g) Brunswick Flaked Tuna, drained
  • ½ cup ( 125 mL ) shredded cheddar cheese
  • 1/3 cup ( 75 mL ) mild salsa
  • 2 tbsp ( 30 mL ) chopped cilantro or parsley
  • 6 ( 6 ) small (6-7"/15-17.5 cm) flour tortillas

Instructions:

  • Combine tuna, cheese, salsa and cilantro. Place 3 tortillas on large baking sheet sprayed with nonstick cooking spray. Divide tuna mixture evenly between tortillas and spread over surface. Top with remaining tortillas. Spray top of tortillas with nonstick cooking spray.
  • Bake at 425°F (220°C) about 10 minutes or until lightly browned and crisp. Cut into wedges and serve with additional salsa, if desired.
